Juan Carlos Ramírez Bautista, mejor conocido como “Chemita” entre sus conocidos y clientes, lleva 37 años al servicio de los paladares de los zamoranos y gente que llega de otros puntos de la región a hacer sus compras al Mercado Hidalgo.
La esquina de Ávila Camacho y Morelia ha sido testigo del paso de los años y de la atención amable que brinda este personaje a quienes llegan a consumir sus platillos.
Además de ser líder social y vecino de la colonia El Vergel en esta ciudad, ha dedicado más de 40 años al servicio del buen comer debido a que su padre, José María Ramírez, mejor conocido como “Chema” y de quien adoptó el diminutivo, inició con el proyecto desde las inmediaciones de la hoy conocida como “Prepa Federal” por la calle de Alonso Martínez desde la década de los 70´s.
“Desde allí, decidimos cambiarnos con mi padre a quien le agradezco que me haya dejado este legado y me brindara su apoyo para no dejar de por vida el mandil y el volteador que sujeto para darle gusto a la gente a través de la comida que realizó. Me tocó ver cómo se movieron los camiones de autobuses de la antigua central camionera, ubicada en 5 de mayo casi con Ávila Camacho, hasta como esta zona se llenó de comerciantes ambulantes”, dijo con la voz entrecortada a EL INDEPENDIENTE TV, en recuerdo a la herencia legada por su progenitor.
Comentó que la especialidad de “Tacos Chemita”, como se le conoce al negocio, son la carne y tripa asada que todos los días prepara a los consumidores acompañado de su salsa especial de tomate y chile de árbol en el molcajete, nopales, aguacate y frijoles de la olla, que son colocados en tortillas dobles o sencillas hechas a mano para darle un toque especial.
Finalmente agradeció a cada uno de los clientes que por más de 35 años han mantenido, más que el negocio, su historia entre la gente de Zamora porque el Mercado Hidalgo lo ha adoptado como uno de sus hijos predilectos, ya que diariamente desde las 8 de la mañana llegan desde visitantes hasta los propios comerciantes a quienes cariñosamente y con amabilidad los trata de “ingenieros” para reconocer su esfuerzo.
